Italian Turkey




A Great Make-Ahead Recipe

INGREDIENTS:


 
  12 pound turkey
1 pound ground salt pork
small jar ground sage
3 tablespoons crushed red peppers
onion salt, garlic salt, pepper
1 stick butter
 


  COMBINE seasonings with ground salt pork
MIX and put in the cavity of washed, dried turkey
RUB outside with butter

COOK at 350* for 1-1/2 hours
REDUCE temp to 200* and continue cooking overnight

When cool enough to handle, remove all skin, bones and sinew
SHRED turkey meat back into turkey drippings and MIX

Makes 16 large sandwiches.
