SLICED ZUCCHINI BAKE



INGREDIENTS:


 
  Zucchini
Onions
Cracker Crumbs
Garlic
  Tomatoes
Mushrooms, canned
Shredded cheese
Salt & Pepper
  Green Peppers
Hot Peppers
Grating Cheese
Vegetable Oil
 
 
AND any other vegetable or seasonings you prefer



Quantities are to your preference. I use small amounts of onions & mushrooms, moderate amount of green peppers, and lots of zucchini and tomatoes.


SLICE THIN: Zucchini, Tomatoes, Green Peppers, and Onion.

In a baking pan, LAYER ingredients starting with the Zucchini.

A solid layer of Zucchini

A sparse layer of Onions

A moderate layer of Green Peppers

A sparse layer of Mushrooms

Salt, pepper, chopped garlic, chopped hot peppers

A solid layer of tomatoes

SPRINKLE with cracker crumbs

POUR a small amount of oil over the layer

SPRINKLE with shredded cheese

REPEAT LAYERS except for the shredded cheese (I also only do one layer of mushrooms)

BAKE covered at 350* for 1 to 2 hours until zucchini is tender when you insert a fork.
